That's a good question. I wrote to Paul Bissonnette at the first address (on Sunset Blvd) last week because the Coyotes list that as their mailing address. However I was doing some more research today because I want to write to Ray Whitney, and it looks like that's the address for their corporate office.
There is an A to Z Fan Guide for Jobing.com Arena and this is copied directly from it:
Fan Mail
Letters to Phoenix Coyotes players should be sent to their attention at 9400 W. Maryland Ave., Glendale, AZ 85305. Fans should not send letters to players from opposing teams for pick-up, as they often arrive too late for delivery.

So I will be writing to Mr. Whitney at the address on W. Maryland Ave since that is what the guide recommends. I have found that not quite half the teams directly state on their website how to write to players so I wish Phoenix would have made it a little more straight-forward.
