How many, that's difficult to answer, depending on the type of email address you're trying to get. Generally though, you're not going to find a personal email address posted, unless perhaps it's on a Web site like this and usually in those cases it's still a professional one.
It's been my experience that any celebrity that has a Web site can be reached by email (usually if you look up the Web site, it will at least give an email address of who it is registered to and you can use that as a springbroad for contact if all else fails as far as email).
Also many singers and performers include their management contact email on their Web sites.
I do not use email often but I have used it to contact some pretty big stars and got results, because I dealt directly with their management team. (I contacted John Travolta, Barbara Walters, and Kris Kristofferson all by email and received personalized 8X10 autographs from each of them.)
There is not an email database (MovieEye used to include email addresses, this site doesn't seem to be too keen on email though).
As far as replies it's generally always better to send a letter/SASE via snail mail.
However stamps, paper and ink and envelopes are all expensive, not to mention photos and paper. You may want to contact them first by email and then if you don't get a reply contact them by regular mail.
