So my final verdict is this: I'm sending out 8 requests total, since that's all i could afford in stamps. They are going to be sent to:

It's a good site for MiLB fans and for those looking to find where the prospects are playing. It also covers the independent leagues, and to a limited extent what former players are roving coaches. Last year it was kept fairly well updated as the season went along.

coaches are usually pretty successful, about the same rate as players anyhow. actually a lot of big name players do sign during spring training, but not all of them, especially not the veterans. look it up on a player-by-player basis. For example, Jeter and Griffey still don't sign, they just have too much mail. But i believe Evan Longoria signs during spring training, although not during the regular season. It's worth looking into, anyway.

Is there a lot of success for spring training with coaches? I'm guessing big name players still won't sign right?

I just bought a mini book of stamps, planning on sending out 8 requests for spring training this year. I'm gonna send to all pitchers, my list right now is:
