I just called Dreamworks and asked if they forwarded fan mail. She said if you want to send a letter to one of the actors they recommend you go through their agent.
She said there is no way to guarantee it will get to them. And as they don't have a production office, in the traditional sense of the word, there isn't a phone number you can call directly to ask about it.
You can take a chance if you want. PLEASE DO read all the lists for celebs that send AP's, PP's, secretarials, and stamps before you send to anyone.
I can tell you from my own experience that Antonio Banderas sends your photos from the movie set to his agency and has them AP'ed and then mailed back to you.
The last person that sent to that address at Shrek 3 for Cameron Diaz got their letter back from her agency signed by a secretary.
If you are okay with that, and want to take a chance they might sign then go for it.
