I can't really comment on exact players who won't sign as it can differ greatly from place to place.
Overall Bolton are pretty good, Kevin Nolan, Jussi Jaaskelainen (although he will only sign one per person), Ricardo Gardner, Gary Cahill and Gary Megson I'm pretty sure will sign.
Aston Villa are the best team IMO (of the established premiership teams that is, new ones are usually the easiest to get!). Gareth Barry, John Carew, Martin Laursen are just a few that always are happy to sign.

I must disagree with your list slightly, Newcastle and Spurs must be moved to poor signers and West Ham and Man City to ok signers. You missed Wigan off your list, I would put them under great signers. Although their first season in the premiership I only got one autograph, and the second season I only got two! Last season however, I managed about 10 and have heard great things about them over the past year.
