Hey well I live really close to disney so i got there a lot! here is what I can tell you,
-Decorations go up the day after Thanksgiving and stay up till mid-January, so you will be there at the perfect time to see them!
-Yes! the Water parks are open year round! no cold weather here! and around the holidays a few of the parks will have special hours where they will open early or close later, you can normally find out by calling the park or asking a person @ your hotel if your staying @ a disney resort.
-The parades are beautiful!! All of the Characters are dressed up in christmas outfits and usually they will dance and sing disney songs and christmas carols on the floats! The ones at night ate especially cool because everything is lit in christmas lights of all colors!
I highly recommend seeing fireworks at Magic Kingdom, The Osmond family light spectacle at Hollywood Studios, and Mickeys very merry Christmas at Magic kingdom. you need a sepaarate ticket for Mickeys very merry Christmas, but its worth it if you can spend the extra $, Also Epcots Holidays around the World is amazing!! they have a giant lake surrounded with different "countries" each is decorated in the traditional holiday decorations of that country and there is some amazing food there! I recommend The Canadian and Japanese restraunts, though they are all good! Also you can buy a ticket to the Candlelight processional at epcot with is really beautiful, its like an old fashioned choir that holds candles and sings christmas carols, and then a pastor comes and reads the christmas story.... Anyways dont worry you will have a blast! the biggest complaint i have is that it is super crowded! be prepared for long lines and lots of waiting for rides.. definitely take advantage of the fast pass system! and bring a light jacket if your at the parks after dark!
