Why do you think he has assistants? They obviously help him with all sorts of day to day activities.
Blind individuals certainly have the ability to sign. Both Doc Watson and Jeff Healy have signed in person for me in the past.
And, there are numerous examples of Wonder autographs out there.

Some people are just hell bent on being mighty keyboard warriors.
