I'm a massive fan of Channing as well! ^^ He is so adorable! So...

Envelope that mean you should enclose envelope with your address and American stamps on it as Channing has his agency in USA. BUT you can also send SAE+IRC. So in that case you send an envelope with your address on it and International Reply Coupons (you get them at the local post office). International Reply Cupons can be exchanged for stamps so celebrity you write to doesn't have to pay for the postage.
So what do you need to send? SASE/SAE+IRC, photo for him to sign (even he sends his own out so that's not necessary), letter.
Good luck with him, he's so sweet. I got his autograph in fall (after 2 years of waiting):
