First off, I usually leave the return address on my SASEs blank but you can also put your address there so it will be extra sure to be delivered to you-even if you've not put enough postage, for example.
Those flat rate envelopes are expensive and not all people add extra things!
To predict postage costs, I weigh my items at home. Since I usually send the same thing to multiple people, I know basic weights. (Ex, up to two 4x6 for the one ounce costs)
I usually send a large 9x12 envelope folded up with two USA first class stamps on it. I have gotten very familiar with the usps website and always go there to answer any postage questions.
