I know this is too late but for anyone else who is going to NY in the future...
It's really hard to get celebs at talk shows if you actually attend the talk show because they come in while you're standing in line indoors, and they may leave while you are still sitting in the studio. If you're lucky you can get them coming in and out of the studio. Letterman's guests are known to stop and sign autographs. After SNL, you can catch the cast coming out of the studios too.
The best way to go is definitely stage doors at plays. Usually after a show has ended is the best time, because they may feel rushed before hand. It's not really play season, though. You'd do much better in the spring when they premiere.
As far as just randomly spotting people...Central Park is always a good place to hang out. My mom is always spotting soap stars. Celebs live all over the place, and you'll do best if you're in a residential area, not walking around Times Square. They are NOT hanging out at Planet Hollywood and Hard Rock Cafe. Those are the tourist traps celebs avoid at all costs!
