I don't think management, venues or hotels would give out this information so not sure how you'd legitimately find it.
The only thing I can suggest is checking out social media for the group to see if there are any clues.
The good part is that once you find out you´ll notice that there´s usually a few hotels used in each city by touring bands. This may be due to the same promoters and booking agencies being involved and they use the people they know and have good experiences with. I got a lot of autographs this way in the late 80s-early 90s and arena headliners stayed in two different hotels in 90% of cases, openers and smaller bands in maybe 3 others if not the same as the headliners. Then there´s the exceptions, bands who stay on tour buses or travel overnight.
Also noticed that after concerts is not the best time, if they stay overnight it´s better when they arrive to the hotel or leave the next day. Then they are not tired after a show or on a tight schedule to go on stage.
