Generally, I would not normally advise someone to send a request to one person and ask them to have the rest of the cast sign. This is mainly because it is a time consuming process for the person concerned.
I am not familiar with the Eastenders cast, but you may want to write a more general request addressed to the cast of Eastenders.
In your letter you should probably write something like you're writing on behalf of _____ charity, you're raising funds via an auction of celebrity autographs, and ask for some sort of signed item for the auction.
