Email is great, but I use it as a jumping off point - asking where I can send a letter of request. If from that they send me an autograph, great, but I never solely use email. It's too easy - IMHO, easier - to ignore or delete or miss an email than a LOR.
That said, people's signing habits can change. They may sign one day, have their secretaries do it the next (as Gene Wilder was rumored to do, especially as he got sicker), and/or not reply at all for whatever reason.
