Ok, ok, I see .....
I wanted to make an easy one but unfortunately it turned the other way round
So here is the solution:
H - E = C
8 - 5 = 3
=> so every letter is shifted 5 positions to the left:
A -> V
B -> W
C -> X
D -> Y
E -> Z
F -> A
G -> B
H -> C
... and so on ...

So:
N -> S
O -> T
V -> A
M -> R
Y -> D
P -> U
N -> S
O -> T
=> "Stardust"
