Does Courtney Cox have a StudioFanMail? Because she's the only one I'm missing for the Friends cast. (I got the other 5 via Studio).

Yes, Courteney does have an SFM address. Cowboys has listed it in the above post.
Her name is Courteney Cox-Arquette and not Courtney Cox-Arquette, which is a common mistake. That's probably why you haven't been able to request her photo.
