Hi,
hope you can help me out. I would love to try my luck for my wife and sent a book with a letter to ask for a signature to Haruki Murakami.
From the publisher I got the reply to use this address

c/o AUTHOR MAIL
Vintage Books
1745 Broadway, 12-1
New York, NY 10019
and that they will forward the letter.
Now the question is will it be returned from the US (I still have some stamps laying around for that) or from Japan (and in that case how do I get stamps
for my return package?)

That might be a question for the publisher. But if you know Haruki Murakami only lives in Japan, Japanese stamps are a good bet.

If your looking food stamps I would go with eBay to buy the stamps you need from the country you need.
