It depends what kind of envelope you've sent it in. If it's a letter size envelope, 1 is fine. If it's a large envelope, I'd recommend you sending 2 (from US to Canada) and 3 (from US to UK) since the postage to Canada is cheaper than UK.

What is the weight and size?

Basically 1 IRC is enough, no matter where you mail from and to, as it cover the basic postage needed. But of course it depends on the size of your envelope. Try to include 2 for 5"x7" envelope, while three for A4 size ones.
