Okay, this may be an obvious question, but I'm a bit confused.
If I'm sending a letter to Canada, can I use U.S. Stamps on the SASE?

No. Each country's stamps only works on mail originating in that country. If your confusion comes from seeing others do it and not having a problem, the answer is possibility that the post office didn't notice they were foreign stamps--they just saw that it was stamped and moved on.
Look in the exchange/sell forum for Canadian stamps, or you could send an IRC. Another option is sending just the SAE and hope the celebrity will pay the postage.
Hope this helped explain things.
