Anyone know German?

I just need help with two phrases in my letter of request please. Is it correct for me as a fan, to say 'Liebe Herr' (Dear Sir)? I keep thinking the word 'Liebe' has a sort of close-relationship/love connotation because of its use in 'ich liebe dich', and I don't want to address the people I'm writing to inappropriately. Also, how do I say 'I hope you are well/doing fine' - is it 'Ich hoffe, das Sie in ordnung sind' or 'Ich hoffe, dass Sie sehr gut sind'?

"Lieber Herr" is correct and it's usual phrase in letters, you can use it, it has the same meaning as "Dear Mr / Sir" ;-)
As for your second question, I'd say "Ich hoffe, dass Sie OK sind."

But I'm not german, I've just learnt german for sevetral years. I hope I helped you. :D
