I believe Roberto Alomar does sign through the mail, not sure about the others though.

My recent successes have been with:
Mike Stanley
Chad Curtis
Jimmy Key
Paul O' Neill

I've had plenty more, but those are the guys I've gotten recently.

The bulk of my TTMs are baseball related. So that's right up my alley...

Chipper Jones -- great at signing. Wait until spring training or after the 2010 season starts and send c/o the Braves
Roberto Alomar -- there's been some recent successes. Only send one card since he's 1 per anyway
Eddie Murray -- not really sure, but I don't think he signs TTM

Some others who are pretty good at responding TTM:
John Olerud
Ron Cey
Pat Neshek (a signing machine -- will sign everything you send to him)
Jamie Moyer
Andre Dawson (will sign one and include a slip for purchasing more)
John Smiley (never saw him smile on any of his cards, but he's great at signing)
Jeff Reardon
Joe Morgan (the manager, not the second baseman)
Fernando Valenzuela

There are also some old time ballplayers who will sign for like 5 to 15 bucks each, such as Bob Feller, Duke Snider, Bobby Doerr, Don Mossi, Gaylord Perry, and Alvin Dark.

That's all I can think of for now.

Here's what I know...
Brett Boone - pretty sure he signs TTM
Richie Sexson
Jamie Moyer - excellent signer TTM c/o the Phillies
Edgar Martinez - not sure, but I seem to recall there were some successes
Freddy Garcia
Chris Snelling
Mike Cameron
Carlos Guillen - don't think he signs TTM (and can be tough IP, from what I've seen)
Joel Piniero
Raul Ibanez

The rest of the guys I can let you know in a PM if I hear or see anything. Or if you want, you can sign up for a free membership at SportsCollectors.net and see the last two weeks of successes: http://www.sportscollectors.net/default.aspx I used to have the paid subscription but I let it lapse. I use the free service just about every day, so if I should see a success I'll give you a holler.
