Re: Spring training
From your original list I would say wigginton and nathan will sign just about anything you send. Also rivera has been known to be pretty good with
Fan mail. I plan on sending him an 8x10 this year

Re: Spring training
Received word that someone mentioned my site here, so I felt obligated to join and contribute what I can.
Here are the signing habits of the guys mentioned:
Curtis Granderson - pretty good signer during Spring Training, but as was previously stated, he began sending out signed 5x7 photo cards during the season last year.
Joe Saunders - signs during Spring Training
Mariano Rivera - sporadic Spring Training signer, didn't sign much last year. I'm 3/3 with him during the regular season by sending my items in a larger package to make it stand out.
Joba Chamberlain - signed some during 08 ST, but not last year.
Jeff Weaver - hasn't signed since 07 ST.
Matt Cain - will sign but expect a long return wait.
Cameron Maybin - doesn't sign.
Matt Capps - will sign.
Richie Nolasco - will sign.
Ty Wiggington - very good signer.
Joe Nathan - very good signer.
Denard Span - signed a few last year.
Jeff Neimann - doesn't sign.
Barry Zito - used to be good, but has basically stopped signing over last few years.
Luis Castillo - doesn't sign.
Ching-Ming-Wang - worth a chance, he will sign sporadically.
Carl Crawford - doesn't sign, but I can put you in contact with a very reliable person who will be doing a private signing with him during spring training. I think it's $20 or $25 per item. I got him this way last season for a set card and was very pleased with how it turned out.
Kevin Millwood - has been sending back a signed Rangers team card over the past few seasons, not sure how he'll do now that he's with the Orioles.
Rich Harden - doesn't sign.
Chone Figgins - reliable signer.
Akinori Iwamara - reliable signer.
