Peyton Manning is under contract with Upper Deck qand there is just about a zero chance you'll get anything other than a pre-print from him.

Sorry, but I'm not up on football enough but I'm pretty sure the people that you're asking for won't sign (at least not for free) TTM.
But if you still want to pursue that avenue of collecting, then your best bet would be to simply mail stuff to the address of the players current team.
Such as
Player's Name
C/O Current Team
______ Stadium (or field, dome, etc.)
Address 1
Address 2 (if needed)
City, State, Zip
A simple google search will be able to tell you the addresses of the stadiums for all the teams.
