For addresses, I would wait until next season, and see what team they are on, whether it be in the Majors or in the Minors. Sending during spring training is another option; at least for the players.
Sometimes you just have to take a chance and try the address that you have. That is part of collecting autographs through the mail. Sometimes you will have success and sometimes you won't. Their are no 100% locks for success.

When spring training opens up, you can go on each team's website to see who was invited to Major League camp. Each team's spring training address should be on their website, especially if you look around/during spring training. You can just send to whomever during spring training. Each franchise has Minor League spring training as well, but I'm not sure if that's the same address or not. Worst comes to worst, you wait until the regular season to send them out. I hope that I explained this well enough.
