Amber Benson is SO sweet. She's very appreciative of her fans and will talk to everyone who approaches her.
James Marsters is also great - especially given how insane some of his fans are.
Anthony Head is, as people have said, very friendly and approachable. And at the con I was at, he auctioned off the chance to squeeze his backside for St. Jude's hospital. You can't NOT love him for that.
James Leary was sooooo adorable at the con I was at. It was his first one, I think, and he was really excited to be there. He's also very funny.
Liev Schreiber is really great - I asked if I could get a pic of him b/c there was no one around to take one of us, so he took my camera, held it out at arm's length and took one of us.

Kristin Davis is very generous. She was in the audience at an event I was at, and was clearly in a hurry to leave, but a fan basically body-blocked her and asked to get a picture, and she stopped. She was 100% on her own personal time and obviously in a rush, but she still took a minute for a fan.
Donald Sutherland seems nice. He was in a big hurry as well but he stopped to sign something for my friend and let me get a pic of him (this was back when I didn't like being in pics with people. I've gotten over it. ;) )
Joe Pantoliano is awesome. Not only did he take pictures with me and my friend, he took a picture of me with another actor!
Rosie Perez is supersweet and very outgoing.
Joel Grey signed something for me even though he was in the audience of a show I was at, bless his heart. He was very polite and friendly about it. I normally don't bother people like that but I'm such a huge fan I could not resist.
Jessalyn Gilsig was very sweet and approachable. And SO beautiful, I practically forgot how to speak!
Robert Sean Leonard took a picture with my friend and chatted a while. He was very sweet and humble. Of course, this was before House, but still, I doubt he's changed much! He seemed like just a really nice person.
Julianna Margulies is always polite and cordial to her fans. She's not very outgoing, but I think she's probably just a little shy and reserved. She's not unfriendly or unpleasant.
Amy Irving was running late to a performance, but she still stopped to sign and take pictures for as long as she could possibly stick around.
Al Pacino came to the stagedoor after a matinee IN THE RAIN and signed autographs. He couldn't get to everyone, though, because the crowd was HUGE, but he signed everything he could reach. I couldn't get to him, but he caught my eye and smiled at me while he was getting into his car. Oh, and a couple of older ladies tried to start up a chant of "Attica! Attica!" and he very politely laughed.
Angelina Jolie will take pictures with and sign for fans, and seem very happy doing so.
Jesse L. Martin is very sweet. He was in the same club as me and my friend to see a concert, and he was very friendly to all the fans who approached him. (He's also VERY handsome in person.)
Matthew Broderick used to live on my block (with his wife and son), and I never met him, but my mom has while walking the dog and says he's a really nice, normal guy.
Hilary Swank is the world's biggest sweetheart. She also used to live in my area and I bumped into her while we were out dog walking. Her puppy wanted to play with the dogs I had with me, so we chatted for a bit. Everyone in the area who ever met her has said the same thing - nicest woman alive, and loves their dogs.

Chad Lowe is also very nice, according once again to my mom, who saw him be approached by a fan while his arms were loaded down with groceries. He stopped and talked even though he looked about to tip over!
Tim Gunn lives near me and he will always stop to talk to someone who approaches him.
I've also seen Carson Kressly (sp?) doing the same, and Mom saw George Clooney also just walking down the street and stopping to chat with fans (I'm still jealous that I wasn't there to see him! I love him to a degree that could be considered unhealthy ;) )
Daphne Rubin-Vega is just one of the kindest, warmest people you could ever hope to meet in your life. She loves her fans - she recognizes most of them and knows them. She's a friend of a friend, so I go to a lot of her concerts, and she will stay for hours to talk to people.
Not so nice (which I'm glad to say is a very short list!):
Brooke Shields. I was stuck in a room alone with her for a minute and had no idea who she was initially (it took me a minute to recognize her.) I tried to strike up a conversation with her to be friendly/polite but she was snotty and cold. In fairness to her, she might just be shy or been having a crummy day.
Julia Stiles was a huge b**** when my friend met her after a performance of The Vagina Monologues.
Glora Reuben and Cynthia Nixon basically run through crowds with their heads down to avoid their fans, and I once saw CN bitching out a prop guy on the SatC set.
I went to high school with Nicky Hilton for a few years. We didn't get along, but it's high school, you know? Teenaged girls are so mean to each other! So I really couldn't say.
That's all I can think of at the moment. I'll edit if I think of anyone else. A friend of mine also knew Anne Hathaway; they went to college together. She said she was very nice, very enthusiastic about her work and very normal. They got along well. Of course, my friend is the kind of person you can't dislike ;) And she likes pretty much everyone.
