should i put his name on the letter
or to whom it is addressed??, if I put his name and his assistant has
to open you will not be able to open?

You are writing the letter to him, so yes, you would address it to him.
If you were referring to his assistant not bring able to open it legally, because it would be addressed to the celebrity, there is no issue here. His assistant would have permission to open his mail.
Don't include his middle name unless he usually uses it, otherwise just use his first and last name.

Also, the correct possessive pronoun for Jennette is "her" not "his". Similarily: "she" not "he", "her" not "him" etc. I only mention it incase you end up writing it in your letter to her

lol, when I was replying I thought it was odd that Jennette was a guy.
