I was just about to try my first SFM request and I was just wondering whether I should address my Email to celebrity I am requesting a photo of or should I address it to SFM (as the chances are it will never be seen by the celeb).

If it is truly an SFM request, the celebrity will never see it. It won't be signed by the celeb, but almost always will have a reproduced (facsimile) autograph on it. I once got one that actually had the "signature" embossed. Once in a great while you might get lucky and get an actual autograph, but that is an extremely rare occurance.

I've heard that you don't even have to put anything in the email except your address.

You heard wrong. Make sure you mention who's photo you are requesting. Don't assume anything, be sure the person reading the e-mail knows what you are looking for.
