I have had a sucess from Kate Winslet via the PFD address in the database (UK) took 3 months, and she payed return postage.

Sadly I can not help with the others, but I know that Ian (The Collector) got a sucess from Catherine Zeta Jones for his charity auction.

I know some of the people on your list sometimes sign, but not always.
Billy Zane signs through venue but I dont think he's filming anywhere.
Also Kate Winslet sometimes signs. I just wrote to her a few days ago so im hoping to get something back.

Here's what I know about a few of the celebrities that you mentioned.

Jacqueline Bisset: A few years ago my sister got a personalized photo from her, but I don't know of anything more recent than that.

Antony Hopkins: He made a public announcement saying that he's not signing things anymore.

Naomi Watts: Someone posted saying that they had gotten a response from writing to her via venue.

I would agree with what has been said about Kate Winslet and Angelina Jolie. (PFD & Studio Fan Mail)

Jane Fonda - I definitely recall hearing about successes from her.
Sean Connery - definitely doesn't sign TTM.
Brad Pitt - same as above.
Michael York - I swear I heard of successes from him before but if you want, I'll double check.
Matt Damon - signs VV.
Angelina Jolie - used to be fantastic VV but now seems she only sends secretarials. Though, as others mentioned, you can get her PP through SFM.
Kate Winslet - only sends PPs.
Naomi Watts - quite rare, but possible VV.
Antony Hopkins - doesn't sign TTM.
